Influencer-Approved Gluten-Free Dinners

With scrolling being far more accessible than stocking your home with a library of cookbooks (although who doesn’t love a beautiful cookbook?), finding recipe inspiration has never been easier. We perused our feed for some deelish meals made by our favourite influencers.

Pan Roasted Cauliflower Pasta with Rosemary Croutons by @phoebelapine

One of the FODMAPs I was most excited to have back in my diet (besides ole faithful, mr. avocado 🥑) was cauliflower. Charlie and I used to crush a head of it a night roasted whole and slathered in some combination of tahini (more FODMAPs) and lemon juice. Right now, there's very little that I won't eat besides gluten. But I still pay attention to my quantities if I want to go to bed without a gas baby in utero.🤰🏼💨 One of my favorite parts of my conversation this week with @katescarlata was her encouragement to experiment and reintroduce. A little bit of gas doesn't constitute a failure. And if you do have a meal that makes you symptomatic it is not going to set you back to #SIBO. Her recommendation when something persists, is to then dial back your fodmaps for a few days and see what happens when you reset. We don't always have to be so black and white with our diets – and in fact, we'd probably be healthier in the long run if we're willing to wade into the grey area.🌚 More on this in this week's episode of the #SIBOMadeSimple podcast – it's a good one!🎙👉🏼 Link in profile. As for this pan-roasted cauliflower pasta with #glutenfree @littlenorthernbakehouse rosemary croutons, you can find the recipe in the #feedmephoebe archives! It’s a fabulous way to enjoy a little cauliflower without it being the main event. #lowfodmapdiet #sibodiet #healthyhedonism

Fresh off a FODMAP diet, Phoebe Lapine was craving some serious cauliflower, so she cooked up full head of it and tossed it in a bowl of pasta with pine nuts, golden raisins, and some crunchy rosemary croutons made from our Millet & Chia loaf. Get the recipe in her #feedmephoebe archive.

Chunky Monkey Banana Bread Pudding by @phoebelapine

Another one from Phoebe, this chunky monkey bread pudding recipe hits all the dessert sweet spots, and in her words is “a great way to Marie Kondo your fridge.” This one uses our gluten-free Whole Grain Wide Slice loaf as the pillowy base for banana, chocolate, and healthy nuts. Get her recipe here.

Miso Mushroom Burger by @veggiekins

Hitting all the right savoury notes, Remy Morimoto Park built a well-textured and healthy patty from semi-rehydrated shitake mushrooms, black beans, almond, oats, and red onion, topping it with a creamy miso tahini sauce. Steal her recipe and pile it high on our Millet & Chia buns.

Monica Stevens Le of @themovementmenu wasn’t messing around the day she made this insane bananas foster French toast! She took our fan-favourite Cinnamon & Raisin loaf and topped it with homemade coconut whip cream, freshly sliced bananas, and vegan caramel sauce. We can’t get enough! Get her recipe here.
