Pickled… avocado? We know, we know. It seems a bit strange, but if you love avocado and anything pickled, you will definitely love this tangy twist on your usual avocado toast. The trick is to snag some underripe avocados and dress them up with the right amount of spice. Serve on our Seeds & Grains loaf for an extra-crunchy texture.
1 cup white balsamic vinegar
1 cup water
1/3 cup sugar
1 tablespoon kosher salt
1 teaspoon crushed red pepper flakes
1/2 teaspoon whole peppercorns
1/2 teaspoon fennel seeds (optional, adds a nice flavor)
1 clove garlic, crushed
Strip of lemon zest
2 underripe avocados, peeled and sliced (firm, but still have give when pressed)
- In a small saucepan, bring vinegar, water, salt, and sugar to a boil. Once sugar is dissolved, allow to cool completely.
- Place remaining seasonings into glass jar with a lid and arrange avocado slices in it.
- Pour cooled liquid over avocado, cover, and refrigerate overnight.
