If you haven’t been introduced to strata before (and if you have), you’re in for a treat. This layered casserole is a cousin of the quiche and frittata but has a deep-dish vibe all its own. The secret to a great strata is the soaked bread cubes to keep the centre moist (we use our Seeds & Grains loaf for extra texture). Our savory version is totally plant-based and gluten-free and works from breakfast to dinner. Dig in!
Preheat Oven to 350F. Grease a small- to medium- sized baking or casserole dish and set aside.
Toss veggies with oil, transfer to a baking sheet, and season with salt and pepper to taste. Roast in the oven until golden brown and tender, about 15 mins.
Mix the batter ingredients together till well incorporated and set aside. Mix the bread cubes, vegan cheese, vegetables and batter together. Pour the final mix into prepared baking or casserole dish. (If you’re making this in advance, you can cover and set overnight in the refrigerator)
Bake for 1 hour or until the top is golden brown.
