Start the New Year in the spirit of good health and celebration with this deceptively decadent banana-stuffed French toast. Our delicious Millet & Chia bread is the perfect packet for warm, creamy banana and WowButter filling. Sure to please, this delectable, allergy-friendly and nut-free dish is elegant enough for a special occasion, wholesome and simple enough for everyday deliciousness.
Make the soaking mixture by pureeing the banana, non-dairy milk, cornstarch, maple syrup, vanilla and cinnamon in a food processor. Transfer to a shallow dish and set aside.
Spread 1 tbsp of Wowbutter on each slice of bread and divide the sliced banana among half the breads slices. Top with the other slices of bread.
Dip each side of the sandwich in the soaking mixture, making sure to shake off the excess.
Cook in a preheated skillet until browned, flip over and cook until the second side is brown. Repeat with the remaining sandwiches.
To make the sauce: combine the brown sugar, vegan buttery spread, and half the coconut cream in a small saucepan. Cook until sugar is dissolved and the mixture has thickened, approximately 3 minutes. Add remaining coconut cream and stir to combine.
Serve hot with caramel sauce, banana slices and coconut whip!
