A Caprese Grilled Cheese is one of the easiest and best ways to make a humble grilled cheese feel gourmet. Crispy gluten-free bread slices are layered with vegan mozzarella and fresh tomatoes. Cooked in a hot skillet until it’s crispy golden brown on the outside, and warm and gooey on the inside, you can enjoy a Gluten-free Caprese Grilled Cheese in just a few minutes!
Instructions for pan-frying:
- Heat a pan on medium.
- Spread one side of each slice of bread with non-dairy buttery spread.
- Assemble your sandwich by laying tomatoes on the unbuttered side of the bread and covering with vegan mozzarella. (Optional: tear up your basil and layer it in with the cheese)
- Add the sandwich carefully to the pan (butter side down), cook until golden-brown, lower the heat and flip, cook until everything is melty inside and golden outside.
- Optional: Garnish with basil and a drizzle of pesto
Instructions for the oven:
- Pre-heat oven to 450℉ and line a baking sheet with parchment paper
- Spread one side of each slice of bread with non-dairy buttery spread.
- Assemble your sandwich by laying tomatoes on the unbuttered side of the bread and covering with vegan mozzarella. (Optional: tear up your basil and layer it in with the cheese)
- Bake in the oven for 5-10 minutes on one side. Flip and finish baking on the other side for 3-5 minutes or until golden brown.
- Optional: Garnish with a drizzle of pesto
