Heat coconut oil in a medium skillet over medium heat. Add sugar and stir until dissolved.
Reduce heat to low and add tbsp of water, stirring until smooth. Add bananas and cook for 2 minutes, spoon the caramel over them. Flip the bananas and continue cooking for one minute.
Toast bread and spread with Wow butter. Top with bananas and sauce, and garnish with coconut chips.
