Slice off the top of a head garlic, splash with olive oil and wrap in foil. Roast in a 350F oven until browned and soft, approximately 45 minutes. Let cool.
While the garlic is roasting, caramelize the onions in oil in a large pan until soft and brown about 10-15 minutes. Allow to cool.
