Move over, shortbread! Converted into bread crumbs, our gluten-free Millet & Chia bread makes a quick, delicious bar cookie crust, allowing you to tuck a little wholesomeness into decadent holiday baking without giving up on taste. Layered with rich fudge filling and topped with crunchy pretzels, these bars are so sublime no one would suspect the easy prep.
Preheat oven to 350F and line an 8×8 baking dish with parchment paper or aluminum foil.
Combine the Millet & Chia bread crumbs, vegan buttery spread, and cane sugar in a small bowl and press firmly into the baking dish in an even layer and bake for 8 minutes.
In a medium saucepan, combine the condensed milk, chocolate chips and vanilla. Heat until melted and smooth, stirring constantly.
Pour the chocolate mixture over the crust and top with pretzels. Bake until the chocolate mixture bubbles around the edges, approximately 15-20 minutes.
Cool completely, and if possible, chill in the fridge overnight.
