Ah, summer. Kick back and toast the arrival of the season of sunshine, outdoor gatherings, and al fresco dining with…toast! Really, what could be a simpler way to celebrate rich, luscious summertime flavours than with easy, healthy, in-season toast toppers? These three delicious toast toppers are quick-to-fix, bright in appearance, and bursting with bold summer taste.

Deceptively Delicate: Shaved Asparagus Toast

Ingredients:

1 slice Little Northern Bakehouse Seeds & Grains Bread

1/2 avocado

3 asparagus spears

2 tablespoons pant-based soft cheese (we used Kite Hill)

1 tablespoon pickled red onion

Small handful pea shoots

1 teaspoon freshly grated lemon zest

Pinch chia seeds

Toast the bread

Mash the avocado and spread over toast

Shave asparagus using a vegetable peeler and arrange on toast

step 04

Garnish with soft cheese, red onion, pea shoots, lemon zest and chia seeds

Tender & Juicy: Roasted RADISH Toast

Ingredients:

1 slice Little Northern Bakehouse Millet & Chia Bread

1/4 cup pant-based soft cheese (we used Kite Hill)

1 bunch of radishes, trimmed and cut in half

1 teaspoon oil

Salt & pepper to taste

1 fresh thyme sprig

Preheat your oven to 375°F.

Toss radishes with oil, salt and pepper, spread on a baking sheet and roast until starting to brown, approximately 25 minutes. Let cool while slightly

Toast the bread and spread with soft cheese

step 04

Top with radishes and thyme (use leftover radishes for more toast or in salads)

Sweet & Crunchy: Strawberry Cream Cheese Pistachio Toast

Ingredients:

1 slice Little Northern Bakehouse Millet & Chia Bread

1 tablespoon plain plant-based cream cheese, at room temperature (we use Daiya)

1/2 tablespoon strawberry jam

2 strawberries

1 tablespoon pistachios

Toast the bread

step 02

In a small bowl, combine cream cheese and jam and spread over toast

Slice strawberries and arrange on toast

Chop pistachios and sprinkle on top
