Meatless Monte Cristo? You’d better believe it. Warm slices of delicious Millet & Chia bread pair with smoked tofu and vegan Swiss cheese to make an ooey, gooey, delight in this take on the classic dipped sandwich. Add a spread of luscious fig jam and a layer of caramelized onions for absolute satisfaction.

Heat coconut oil in a medium skillet and cook the onions until sizzling. Reduce the heat and cook until caramelized, 25-35 minutes, stirring often.

In a shallow bowl, combine chia and milk and set aside.

Layer 2 slices of bread with jam, tofu, cheese and onion and top with another slice.

Dip the sandwich in the chia mixture being sure every side is thoroughly coated. Cook for 3 minutes on either side until cheese is warm and melty.

Finish with a light dusting of icing sugar.
