This Salted Vanilla Sunflower Seed butter is bursting with flavour and hits all the right notes of salty and sweet. Get your nut-butter fix (without any actual nuts) by spreading it on our Seeds & Grains loaf, dunking some fresh fruit in it, or mixing some into your favourite cookie recipe.
Preheat the oven to 325F. Spread the sunflower seeds on a large cookie sheet and bake until fragrant and lightly toasted and golden, approximately 15 minutes. Cool completely.
Transfer the toasted seeds to a high-powered blender or food processor and blend until almost smooth, adding oil little at a time as necessary to help the mixture come together. Scrape down the sides often.
Just before the mixture is smooth, add sugar to taste along with the vanilla and salt. Continue blending until it reaches your desired consistency.
