Looking to cut back on sugar? Bursting with the full-bodied sweetness of summer, this easy make-at-home sugar-free jam brings frozen strawberries to life any time of year. You’ll love the taste and texture of this subtly sweet spread that pairs well with our delicious bread or your favourite non-dairy ice cream.

Put the strawberries in a small, heavy-bottomed saucepan over medium heat. As they thaw, mash them with a fork or potato masher.

Dissolve the arrowroot powder in water and add to the strawberries. (*Don’t have arrowroot powder? Substitute 1 1/2 teaspoons of cornstarch).

Reduce the heat to low and continue cooking until the mix begins to thicken. When you can run a spatula through the centre and leave a gap that takes a few seconds to fill in, it’s ready.

Add sweetener, lemon juice, salt and vanilla and mix in well.

Transfer to a clean jar with an airtight lid and refrigerate until cool (it will continue to thicken as it cools). Store in the fridge for up to 1 week.
