Lightly sweetened with pure maple syrup, this is hands down the tastiest…and simplest…plant-based French toast we’ve ever made! The waffle iron makes for easy preparation and cleanup. Not even a spatula is required to produce crisp deliciousness without a skillet.
In a bowl, combine the coconut milk, ground chia, maple syrup and vanilla. Let rest for 10 minutes until the mixture has thickened slightly.
Lightly grease your waffle maker with the melted coconut oil and heat.
Dip each slice of bread into the liquid until completely coated and soaked through. Place the bread into the waffle iron to cook until golden brown. Alternatively, if you don’t have a waffle maker, you can fry the slices off in a pan for 3-4 minutes a side.
Let rest for one minute to allow bread the French toast to firm up.
