Incorporating different textures, global flavours, and a hint of complex heat, this recipe is all about celebrating the street food influence and origins of its key ingredient—chaat masala.

Chaat and Chaat Masala

In India, chaat is the name for a type of street food. Chaat could be any combination of a variety of ingredients like potatoes, veggies, yogurt, chutneys, and spices. But there’s one thing that every kind of chaat has in common—they’re all seasoned or topped with a blend of spices called chaat masala.

Chaat masala is an essential ingredient in Indian street food culture and is used as a seasoning and garnish in a wide variety of dishes. Usually a combination of coriander, cumin, mango powder, black rock salt, and chili powder, chaat masala’s distinctive, mouth-watering taste is complex, yet simply delicious! Many people describe the flavour as a blend of sweet, tart, salty, tangy, a little bit of smoky spiciness, and a hint of sour.

Although delicious, traditional chaat masala often contains gluten thanks to a hard to pronounce ingredient called asafoetida.

By nature, asafoetida does not contain gluten, but because it is usually processed and cut with wheat flour, most of the asafoetida you find at your local grocery store is not gluten-free. So, we decided to create a gluten-free allergy-friendly chaat masala recipe that everyone can enjoy!

Team Sweet or Team Sour?

The dish that inspired this tasty toast topper is traditionally made with green, unripe mango. These mangoes are specifically picked green and sold unripe for their crisp texture, and tart, slightly sour flavour. They’re perfect for this dish! But unless you live in a culturally rich neighbourhood, they can be difficult to find. Your best bet is to try your local Asian supermarket to see if they sell unripe, green mangoes.

We chose to make this Easy Gluten-free Crunchy Mango Chaat Toast Topper with ripe mangoes because they are a lot easier to find—and we wanted this recipe to be as easy and approachable as possible! The ripe mangoes add a familiar sweetness that everyone can enjoy, but if you want a little extra zing in each bite, opt for the traditional method and use green mangoes.

Instructions:
  1. In a medium bowl, combine all ingredients—except for the gluten-free corn flakes. Then add in more salt, lime and/or chutney as needed until you reach your desired taste.
  2. Toss and mix well.
  3. Toast your slices of Little Northern Bakehouse Cinnamon & Raisin gluten-free bread.
  4. Mix up your Gluten-free Chaat Masala Vegan Cream Cheese and spread on top of the bread. Add an extra sprinkle of gluten-free chaat masala spice to dial up the flavour.
  5. Add your favourite unsweetened gluten-free corn flakes to the mango topping for the perfect amount of crunchiness.
  6. Top your cream cheese toast with the crunchy mango topping, serve and enjoy!
